  • In a medium bowl, mash the ripe bananas thoroughly using a fork or potato masher until smooth. Add the melted butter, eggs, and vanilla extract to the mashed bananas. Stir well until combined.
  • In a separate bowl, whisk together the sugar, baking soda, and salt. Gradually add the dry ingredients into the banana mixture, stirring gently just until combined. Avoid overmixing.
  • Fold in the chopped pecans evenly throughout the batter. Lightly grease your small loaf pan and pour the batter in, smoothing the top.
  • Set your air fryer to 320°F (160°C) and preheat for 3-5 minutes. Place the loaf pan inside the air fryer basket and cook for 25-30 minutes. Check doneness by inserting a toothpick in the center—if it comes out clean, the bread is done.
  • Allow the banana bread to cool in the pan for about 10 minutes before removing and slicing. Serve warm or at room temperature.

Notes

For an extra special touch, you can sprinkle a bit of sugar on top of the batter before air frying. This adds a delightful crunch to the crust.
