Equipment

  • Mixing bowls (large and medium)
  • Whisk or fork
  • 9×5 inch loaf pan
  • Non-stick spray or parchment paper
  • Measuring cups and spoons
  • Spatula
  • Cooling rack

Ingredients

  • 3 ripe bananas mashed
  • 2 cups almond flour
  • 1/4 cup honey or maple syrup
  • 3 large eggs
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or chocolate chips optional

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mix Wet Ingredients

  • In a large mixing bowl, combine the mashed bananas, melted coconut oil (or butter), honey (or maple syrup), eggs, and vanilla extract. Mix well until everything is thoroughly combined.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together the almond flour, baking soda, salt, and ground cinnamon (if using). Ensure there are no lumps in the mixture.

Step 4: Combine Wet and Dry Ingredients

  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the bread dense. If you’re adding walnuts or chocolate chips, fold them in at this stage.

Step 5: Pour into Loaf Pan

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Step 6: Bake

  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.

Step 7: Cool and Serve

  • Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and enjoy your delicious Almond Flour Banana Bread!
