Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • loaf pan,
  • Whisk
  • Spatula

Ingredients

  • 2 ripe bananas mashed
  • 1 large apple peeled and grated
  • 2 large eggs
  • 1/3 cup vegetable oil or melted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans optional

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper for easy removal.

Prepare the Wet Ingredients

  • In a large mixing bowl, mash the ripe bananas using a fork or potato masher. Add the grated apple, eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract. Whisk everything together until smooth and well-combined.

Mix the Dry Ingredients

  • In a separate medium bowl, sift the flour, baking soda, baking powder, cinnamon, and salt. Stir until the dry ingredients are evenly mixed.

Combine Wet and Dry Ingredients

  • Slowly fold the dry ingredients into the wet mixture. Stir until just combined, being careful not to overmix, as this can result in a dense loaf. If you’re using chopped nuts, fold them into the batter at this stage.

Pour the Batter into the Loaf Pan

  • Pour the batter into your prepared loaf pan and spread it out evenly with a spatula.

Bake the Bread

  • Place the loaf pan in the preheated oven and bake for about 1 hour or until a toothpick inserted into the center comes out clean. The top should be golden brown, and the house will smell amazing.

Cool and Serve

  • Once the bread is fully baked, remove it from the oven and let it cool in the pan for about 10 minutes. Afterward, transfer it to a cooling rack to cool completely before slicing. Enjoy a warm slice with a bit of butter, or savor it as is!

Notes

For a nut-free option, omit the walnuts. You can also substitute applesauce for the bananas if desired. This bread can be made up to a day in advance and stored in an airtight container at room temperature.
