- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup 2 sticks unsalted butter, softened
- 1 ½ cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple butter
- 1 cup grated apples about 1-2 apples
For the Frosting:
- 8 ounces cream cheese softened
- ½ cup unsalted butter softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk optional
Prepping the Batter
Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan. In a large bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
Add the apple butter and grated apples to the wet ingredients and mix until just combined. Don’t over mix!
Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
Baking the Cake
Pour the batter into your prepared baking pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely on a wire rack before frosting.
Making the Frosting
In a large bowl, cream together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and mix until incorporated. Stir in the vanilla extract.
If the frosting is too thick, add milk one tablespoon at a time until you reach a desired spreading consistency.
Frosting and Serving
Once the cake is cool, spread the frosting evenly over the top. You can get fancy with piping tips or simply use a spatula for a rustic look.
Slice, serve, and enjoy your delicious apple butter cake with frosting!
