Ingredients
  

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 ½ teaspoons salt
  • 2 tablespoons honey
  • 1 tablespoon active dry yeast
  • 1 ½ cups warm water 110°F or 45°C
  • 2 tablespoons olive oil
  • Optional: ¼ cup sunflower seeds or rolled oats for topping

Instructions
 

  • Activate Yeast: In a small bowl, dissolve 1 tablespoon of honey in the warm water. Sprinkle the yeast on top and let it sit for 5-10 minutes until frothy.
  • Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, all-purpose flour, and salt.
  • Combine Ingredients: Make a well in the center of the dry ingredients. Pour in the yeast mixture and olive oil. Stir with a wooden spoon or dough hook until a rough dough forms.
  • Knead Dough: Turn the dough out onto a lightly floured surface. Knead for about 8-10 minutes, or until the dough is smooth and elastic. Add a little more flour if the dough is too sticky.
  • First Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  • Shape and Second Rise: Punch down the dough and transfer it to a lightly floured surface. Shape it into a loaf and place it in a greased 9x5-inch loaf pan. Cover and let it rise again for about 30 minutes.
  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Bake: Optional: Brush the top with a little olive oil and sprinkle with sunflower seeds or rolled oats. Bake for 35-40 minutes, or until the loaf sounds hollow when tapped on the bottom and has a golden-brown crust.
  • Cool: Remove from the oven and cool on a wire rack before slicing.
