Ingredients
  

  • 3 ripe bananas mashed
  • 1 cup dates pitted and chopped
  • cups all-purpose flour
  • ½ cup granulated sugar or honey
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts walnuts or pecans recommended

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease or line a 9×5 inch loaf pan with parchment paper. In a large mixing bowl, mash the ripe bananas. Add the sugar (or honey), eggs, vegetable oil, water, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, stirring just until combined. Do not overmix.
  • Fold in the chopped dates and nuts evenly. Pour the batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
