Ingredients
  

  • 5 ripe bananas mashed
  • 5 1/4 cups whole wheat flour or spelt flour
  • 5 large eggs
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup applesauce or Greek yogurt
  • 2/3 cup maple syrup or honey
  • 2 tsp pure vanilla extract
  • 2/3 cup vegetable oil or melted coconut oil
  • 2 tsp ground cinnamon optional
  • 1 cup chopped walnuts or pecans optional
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans or line them with parchment paper.
  • In a large mixing bowl, mash the bananas until smooth.
  • Add the applesauce, maple syrup, vanilla extract, and vegetable oil to the mashed bananas. Mix until well combined.
  • In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • If desired, fold in the chopped walnuts or pecans and/or chocolate chips.
  • Divide the batter evenly between the prepared loaf pans.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Notes

Avoid Overmixing: Mixing the batter too much can lead to dense, tough bread.
Room Temperature Ingredients: Using room-temperature eggs and applesauce ensures even mixing.
Banana Ripeness: The riper the banana, the better the flavor.
