Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup light brown sugar packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup blueberries fresh or frozen
  • ½ cup unsalted butter melted and slightly cooled
  • 3 medium ripe bananas mashed (about 1½ cups)
  • 2 large eggs at room temperature
  • 2 teaspoons pure vanilla extract

Instructions
 

Preheat & Prepare Pan:

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easier removal.

Mix Dry Ingredients:

  • In a medium mixing bowl, whisk together the flour, brown sugar, baking soda, and salt. Toss in the blueberries and gently stir to coat them in the flour mixture (this helps prevent sinking during baking).

Mix Wet Ingredients:

  • In a large bowl, combine the mashed bananas, melted butter, eggs, and vanilla extract. Stir until smooth and fully blended.

Combine Wet and Dry:

  • Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon. Mix just until no flour streaks remain—do not overmix.

Bake & Cool:

  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added flavor, consider mixing in some chopped nuts or a sprinkle of cinnamon. You can also swap out half the flour for whole wheat flour for a healthier twist.
If you prefer a sweeter bread, feel free to increase the sugar by a couple of tablespoons.
