Ingredients
  

  • 2 ½ cups all-purpose flour
  • 4 large overripe bananas mashed very well
  • ¾ cup unsalted butter softened
  • 1 ¼ cups granulated sugar

  • 1/3 cup buttermilk or milk if you don’t have buttermilk
  • 1 ½ tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ cup brown sugar packed
  • 1 cup sour cream
  • ½ tsp salt
  • 1 tsp cinnamon optional, for added flavor
  • ¾ cup chopped walnuts or chocolate chips optional, but recommended!

Instructions
 

Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a bundt pan (10-inch size works well), or use a non-stick spray with flour built in.

Prepare the wet ingredients:

  • In a large mixing bowl, cream together the softened butter and both sugars (granulated and brown) until light and fluffy. You can use an electric mixer or beat by hand. Add the eggs, one at a time, mixing well after each addition.

Add the mashed bananas and liquids:

  • Stir in the mashed bananas, buttermilk (or milk), and vanilla extract. Mix until everything is well combined.

Mix dry ingredients:

  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

Combine wet and dry ingredients:

  • Gradually add the dry ingredients into the wet mixture, mixing just until incorporated. Be careful not to overmix, as this can affect the texture.

Add sour cream and nuts:

  • Stir in the sour cream, and if you’re using walnuts or chocolate chips, fold them into the batter.

Pour into the bundt pan:

  • Pour the batter evenly into the prepared bundt pan, smoothing the top with a spatula.

Bake:

  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Since bundt pans are larger and have more surface area, the baking time may vary, so keep an eye on it and start checking after 55 minutes.

Cool:

  • Once baked, allow the banana bread to cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
