Ingredients
  

  • 2 cups 250 g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon optional, but recommended
  • ¼ teaspoon salt

  • ½ cup 115 g unsalted butter, softened (or substitute with oil or half butter, half oil based on preference)
  • 2 large eggs
  • 1 cup 225 g mashed ripe bananas (about 2 to 3 medium bananas)
  • 1 teaspoon vanilla extract
  • ½ cup 120 ml buttermilk

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5-inch loaf pan or line it with parchment paper for easier removal. In a medium bowl, whisk together the flour, baking soda, cinnamon (if using), and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using a hand mixer or stand mixer. This should take about 2–3 minutes.
  • Beat in the eggs one at a time, then mix in the mashed bananas and vanilla extract until well combined. Add the dry ingredients to the wet mixture in two additions, alternating with the buttermilk. Mix gently until everything is incorporated do not over mix.
  • Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
