Ingredients
  

  • 1 ½ cups mashed overripe bananas
  • 240 g all-purpose flour
  • ½ cup melted unsalted butter cooled
  • 1 tsp baking soda
  • ½ cup Local Hive™ Clover Raw & Unfiltered Honey
  • 2 large eggs at room temperature
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Set your oven to 350°F (175°C). Lightly oil a 9×5 loaf pan or line it so the finished loaf lifts out without trouble.
  • Mash the bananas in a bowl, and then stir in the cooled melted butter, honey, eggs, and vanilla until the mixture looks even. In a second bowl, combine the flour, baking soda, cinnamon, and salt, breaking up any clumps as you go.
  • Pour the dry mix into the banana mixture. Fold slowly and stop as soon as the batter looks unified too much stirring makes it tough.
  • Transfer the batter to the pan and spread it out. Bake for 55–65 minutes, checking with a toothpick to confirm the center has cooked through.
  • Leave the loaf in the pan for about 10 minutes, and then move it to a rack. Once fully cooled, cut into slices.
