Ingredients
  

For the Banana Bread:

  • 2 ½ cups mashed ripe bananas about 6-8 medium bananas
  • 2 ½ cups all-purpose flour 312 g
  • 2 large eggs
  • 1 ¼ teaspoons baking soda
  • 1 ¼ teaspoons baking powder
  • 1 ¼ cups light brown sugar 275 g
  • ½ cup granulated sugar 100 g
  • cup sour cream 160 g; Greek yogurt may be substituted
  • 1 ¼ cups butter 290 g, softened
  • 1 pinch salt
  • 5 teaspoons vanilla extract

For the Cream Cheese Filling:

  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Prepare the Cream Cheese Filling:

  • In a medium bowl, beat the softened cream cheese, ½ cup granulated sugar, 2 eggs, and 2 teaspoons vanilla extract until smooth. Set aside.

Make the Banana Bread Batter:

  • In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

Mix in the Bananas:

  • Stir in the mashed bananas and sour cream until well combined.

Combine Dry Ingredients:

  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

Combine Mixtures:

  • Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.

Assemble the Loaf:

  • Pour half of the banana batter into the prepared loaf pan. Spread the cream cheese filling evenly over the batter, then top with the remaining banana batter.

Bake:

  • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with foil.

Cool:

  • Once done, remove the bread from the oven and let it cool in the pan for about 10-15 minutes. Then transfer it to a wire rack to cool completely.
