Ingredients
  

For the Peanut Butter Cake:

  • 2 ¼ cups all-purpose flour
  • 1 ½ cups sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 ½ cups buttermilk room temperature
  • 1 cup unsalted butter softened
  • 4 large eggs room temperature
  • 1 ¼ cups creamy peanut butter smooth
  • 2 tsp vanilla extract

For the Peanut Butter Frosting:

  • 1 ¼ cups creamy peanut butter
  • 6 oz cream cheese softened
  • 5 cups powdered sugar
  • 4 tsp vanilla extract
  • 4 –5 tbsp milk as needed for consistency
  • Pinch of salt

For the Decorative Topping:

  • Mini peanut butter cups optional, for garnish
  • Sprinkles optional, for color

Instructions
 

Preheat & Prepare:

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

Make the Cake Batter:

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat the buttermilk, softened butter, eggs, peanut butter, and vanilla extract until smooth. Gradually add the dry ingredients to the wet ingredients and mix until combined.

Bake:

  • Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cakes cool in the pans for 10 minutes, then remove and cool completely on a wire rack.

Make the Frosting:

  • Beat the peanut butter and cream cheese together until smooth. Gradually add powdered sugar, vanilla extract, milk, and a pinch of salt. Beat until smooth and fluffy, adding more milk if needed to achieve desired consistency.

Assemble the Cake:

  • Once the cakes are completely cooled, spread a layer of frosting on the top of one cake. Place the second cake on top and frost the entire cake with the peanut butter frosting.

Decorate:

  • Garnish with mini peanut butter cups and sprinkles, if desired.
