Equipment

  • Mixing bowl
  • Whisk or electric mixer
  • Measuring cups and spoons
  • 9×13-inch baking dish (or similar)
  • Spoon or spatula for stirring

Ingredients

  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 cup unsalted butter softened
  • 1 package butterscotch instant pudding and pie filling mix
  • 1 cup water
  • 3 large eggs
  • 1 cup heavy cream for richer flavor, can substitute with regular milk
  • 1/2 cup toffee bits or crushed toffee candy
  • 1 tablespoon all-purpose flour
  • 2 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.

Mix Wet Ingredients:

  • In a large mixing bowl, combine the cake mix, softened butter, butterscotch pudding mix, water, eggs, heavy cream, and vanilla extract. Mix well with a whisk or electric mixer until the batter is smooth.

Add Dry Ingredients:

  • In a separate small bowl, mix the all-purpose flour and brown sugar together. Gradually add this dry mixture to the batter, folding it in until fully incorporated. This will help thicken the batter and add extra texture.

Add Toffee Bits:

  • Gently fold in the toffee bits or crushed toffee candy. This will add delicious chunks throughout the cake.

Bake:

  • Pour the batter into your prepared baking dish. Spread it out evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Allow the cake to cool for about 10 minutes in the pan before slicing. Serve as is or with whipped cream or a scoop of vanilla ice cream for added indulgence.

Notes

This Butter Brickle Cake Mix is a wonderful starting point, but don’t be afraid to experiment. You can swap in different types of toffee bits, or even add chopped nuts, such as pecans or walnuts, for extra texture and flavor.
I highly recommend serving the cake warm with a scoop of vanilla ice cream – trust me, it’s a match made in dessert heaven!
