Ingredients
  

  • 1 egg
  • 35 g granulated sugar
  • 30 g melted butter
  • 200 g milk
  • 125 g glutinous rice flour
  • Softened butter for greasing the mold

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease your baking mold or muffin tin with softened butter to prevent sticking.
  • In a mixing bowl, whisk together the egg and granulated sugar until well combined. Add the melted butter and milk to the mixture, stirring until smooth.
  • Sift the glutinous rice flour into the wet mixture in three increments, mixing thoroughly after each addition to ensure a smooth batter.
  • For an extra smooth texture, pass the batter through a fine sieve to remove any lumps. Pour the prepared batter into the greased mold, filling each cavity about three-quarters full.
  • Place the mold in the preheated oven and bake for 30 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  • Allow the butter rice cakes to cool in the mold for about 10 minutes before transferring them to a wire rack to cool completely.
