  • Small bowl for yeast mixture
  • Rubber spatula

Ingredients

For the Cake:

  • 2 ¼ cups all-purpose flour
  • 1 ½ cups sugar
  • ½ teaspoon kosher salt
  • 1 cup unsalted butter softened
  • 4 large eggs
  • ½ cup warm water
  • 2 packets active dry yeast 4 teaspoons
  • 2 whole eggs + 4 egg yolks
  • 2 teaspoons vanilla extract

For the Streusel Topping:

  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar packed
  • 2 teaspoons ground cinnamon
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter melted

Instructions

Activate the Yeast:

  • In a small bowl, combine warm water and active dry yeast. Stir and let sit for 5-10 minutes until bubbly and frothy.

Make the Cake Batter:

  • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. Add in the 2 whole eggs, 4 egg yolks, and vanilla extract, beating well after each addition. Gradually mix in the flour and salt. Stir in the yeast mixture until smooth.

Rise the Dough:

  • Transfer the dough to a greased bowl, cover with a damp towel, and let rise in a warm place for 1-1.5 hours or until doubled in size.

Prepare the Streusel Topping:

  • In a separate bowl, combine flour, brown sugar, cinnamon, and salt. Stir in melted butter until the mixture forms a crumbly texture.

Assemble the Cake:

  • Preheat the oven to 350°F (175°C). Once the dough has risen, punch it down and transfer it to a greased 9×13-inch baking pan. Spread the dough evenly in the pan.

Add Streusel:

  • Sprinkle the streusel topping evenly over the dough.

Bake:

  • Bake for 25-30 minutes or until the cake is golden brown and a toothpick inserted comes out clean.

Cool and Serve:

  • Allow the cake to cool for 10 minutes before slicing and serving. Enjoy!

Notes

❖ Room Temperature Ingredients: For the best texture and consistency, make sure your butter and eggs are at room temperature before mixing them. This allows them to incorporate more evenly into the batter, resulting in a light and fluffy cake.
❖ Customize the Streusel: Feel free to get creative with the streusel topping. You can add chopped nuts like pecans or walnuts for extra crunch and flavor, or even sprinkle in some chocolate chips for a fun twist.
❖ Don’t Overmix the Batter: When adding the dry ingredients to the wet ingredients, mix until just combined. Overmixing the batter can lead to a dense and heavy cake. The key is to keep it light and fluffy!
❖ Add a Glaze for Extra Sweetness: If you love a sweeter touch, you can drizzle a simple glaze on top once the cake has cooled. To make the glaze, whisk together powdered sugar, vanilla extract, and a little milk until smooth, and drizzle it over the cake for a beautiful finish.
