For the Cake:

  • 1 cup unsalted butter softened
  • 2 cups granulated sugar

  • 1 cup toffee bits plus extra for topping

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.

Step 2: Cream the Butter and Sugar

  • In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes.

Step 3: Add Eggs and Vanilla

  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.

Step 4: Combine Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined; do not overmix.

Step 5: Fold in Toffee Bits

  • Gently fold in the toffee bits, ensuring they are evenly distributed throughout the batter.

Step 6: Bake the Cake

  • Pour the batter into the prepared baking pan(s) and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Step 7: Cool the Cake

  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 8: Prepare the Topping

  • In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until you achieve stiff peaks.

Step 9: Assemble the Cake

  • If you used round cake pans, place one layer on a serving platter. Spread a layer of whipped cream on top, then sprinkle with additional toffee bits. Place the second layer on top and repeat the process. If using a single-layer cake, simply spread the whipped cream on top and garnish with toffee bits.

Notes

This butter toffee cake is incredibly versatile. For a more decadent version, drizzle melted chocolate over the frosting or add a layer of caramel in between.
You can also turn this recipe into cupcakes by using a muffin tin and adjusting the baking time to about 20-25 minutes.
