Ingredients
  

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract

For the Vanilla Buttercream Frosting:

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2-4 tablespoons milk or heavy cream
  • Pinch of salt

Instructions
 

Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Mix dry ingredients:

  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Combine wet ingredients:

  • In a large bowl, beat the sugar and eggs together until light and fluffy, using a hand mixer or stand mixer on medium speed. Add the milk, vegetable oil, and vanilla extract, and mix until combined.

Combine wet and dry ingredients:

  • Gradually add the dry ingredients into the wet ingredients in three parts, mixing just until combined after each addition. Be careful not to overmix the batter.

Bake the cake:

  • Divide the batter evenly between the two prepared cake pans. Smooth the top with a spatula and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Cool the cakes:

  • Let the cakes cool in the pans for 10 minutes, then turn them out onto a cooling rack to cool completely.

Prepare the frosting:

  • While the cakes are cooling, make the vanilla buttercream frosting. In a large mixing bowl, beat the softened butter until creamy and smooth. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until the frosting is light and fluffy. Add the milk or cream 1 tablespoon at a time to reach your desired frosting consistency.

Assemble the cake:

  • Once the cakes are fully cooled, place one layer on a serving plate. Spread a layer of frosting on top. Place the second cake layer on top and frost the top and sides of the entire cake with the vanilla buttercream frosting.
