Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce or vegetable oil for a richer cake
  • 1 teaspoon vanilla extract
  • 1 cup milk dairy or non-dairy
  • 1 tablespoon white vinegar or lemon juice

Instructions
 

Preheat and Prep:

  • First things first, preheat your oven to 350°F (175°C). Grease and flour your 8-inch cake pan, or line it with parchment paper for easier removal.

Whisk the Dry Ingredients:

  • In your large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine the Wet Ingredients:

  • In a separate bowl, whisk together the applesauce (or oil), vanilla extract, milk, and vinegar/lemon juice. Make sure everything is well combined.

Unite Wet and Dry:

  • Pour the wet ingredients into the dry ingredients and whisk gently until just combined. Don’t over mix! A few lumps are perfectly fine.
