  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 cup milk or dairy-free alternative
  • 3/4 cup plain yogurt or sour cream
  • 2 large eggs
  • 1 tablespoon baking powder

For the Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • Zest of 1 lemon or orange to complement the cake

Instructions

Step 1: Prepare the Oven and Baking Pan

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt.
  • If you're using zest, add it to the dry mixture to infuse flavor.

Step 3: Cream Butter and Sugar

  • In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.

Step 4: Combine Wet Ingredients

  • In a separate bowl, whisk together the milk and yogurt (or sour cream).
  • If using, add the almond or lemon extract to this mixture.

Step 5: Combine All Ingredients

  • Gradually add the dry ingredients to the butter mixture, alternating with the milk mixture. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Step 6: Bake the Cake

  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 7: Make the Frosting

  • In a mixing bowl, beat the softened butter until creamy.
  • Gradually add powdered sugar, alternating with milk, until you reach your desired consistency.
  • Add the zest and mix well.

Step 8: Frost the Cake

  • Once the cake is completely cooled, spread the frosting evenly on top and sides.
  • Decorate with additional zest or fruit if desired.
