2cupsall-purpose flouror self-raising flour if preferred
1tablespoongranulated sugar
1tablespoonbaking powderskip if using self-raising flour
1teaspoonsalt
1cupshredded cheddar cheeseor any melting cheese you like
½cupcooked baconcrumbled
¼cupchopped green onions or chives
2large eggslightly beaten
½cupvegetable oil or melted butter
1cupmilk
Instructions
Start by heating your oven to 180°C (350°F). While it warms up, lightly grease a loaf pan so the bread won’t stick.
Take a large bowl and add the flour, sugar, baking powder, and salt. Mix them well so everything is evenly combined.
Stir in the shredded cheese, bacon, and green onions, making sure they are spread evenly through the mixture. In a separate bowl, beat the eggs, and then add the milk and oil or melted butter. Mix until smooth.
Slowly pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to over mix.
Pour the batter into the greased loaf pan and level the top. Bake for 40 to 45 minutes, until the loaf turns golden and a toothpick inserted in the center comes out clean. Let it cool slightly before cutting.
Notes
Note: For extra flavor, you can add a pinch of black pepper or paprika. This bread is best served warm but also tastes great toasted the next day.
