Ingredients
  

  • 2 cups all-purpose flour or self-raising flour if preferred
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder skip if using self-raising flour
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese or any melting cheese you like
  • ½ cup cooked bacon crumbled
  • ¼ cup chopped green onions or chives
  • 2 large eggs lightly beaten
  • ½ cup vegetable oil or melted butter
  • 1 cup milk

Instructions
 

  • Start by heating your oven to 180°C (350°F). While it warms up, lightly grease a loaf pan so the bread won’t stick.
  • Take a large bowl and add the flour, sugar, baking powder, and salt. Mix them well so everything is evenly combined.
  • Stir in the shredded cheese, bacon, and green onions, making sure they are spread evenly through the mixture. In a separate bowl, beat the eggs, and then add the milk and oil or melted butter. Mix until smooth.
  • Slowly pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to over mix.
  • Pour the batter into the greased loaf pan and level the top. Bake for 40 to 45 minutes, until the loaf turns golden and a toothpick inserted in the center comes out clean. Let it cool slightly before cutting.

Notes

Note: For extra flavor, you can add a pinch of black pepper or paprika. This bread is best served warm but also tastes great toasted the next day.
