Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Wooden spoon or dough hook
  • Loaf pan or baking sheet
  • Clean kitchen towel
  • Oven
  • Pastry brush (optional, for egg wash)

Ingredients

  • 1 tablespoon sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • teaspoons 1 packet active dry yeast
  • 1 cup warm water about 110°F / 45°C
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 large egg

Instructions

Activate the Yeast:

  • In a large bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for 5–10 minutes, until the mixture becomes foamy. This means the yeast is active and ready to use.

Mix the Dough:

  • Add the flour, salt, shredded cheddar, grated Parmesan, chopped parsley, thyme, rosemary, and olive oil (or melted butter) to the yeast mixture. Mix with a wooden spoon or use a stand mixer with a dough hook until a shaggy dough forms.

Knead the Dough:

  • Turn the dough out onto a floured surface and knead for about 8–10 minutes until it’s smooth and elastic. If the dough is sticky, add a little flour as needed. Shape it into a ball.

Let It Rise:

  • Place the dough in a lightly oiled bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape and Prepare for Baking:

  • Punch down the dough and shape it into a loaf or place it into a greased loaf pan. In a small bowl, beat the egg and brush it over the top of the dough. This helps give it a nice golden color when baked.

Bake the Bread:

  • Preheat the oven to 375°F (190°C). Bake the bread for 25–30 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom. Let it cool on a wire rack before slicing.

Notes

Note

This bread is perfect served warm with soup or as a savory sandwich base. You can experiment with other cheeses like mozzarella or gruyere, or even mix in sun-dried tomatoes or olives for extra flavor. If you prefer a crisper crust, bake the loaf directly on a baking stone or sheet instead of in a pan.
