Step 1: Prepare the Dough

  • Activate the Yeast: In a large bowl, combine warm water, sugar, and instant yeast. Allow it to sit for about 5 minutes until frothy.
  • Mix the Ingredients: Add the olive oil, flour, and salt to the yeast mixture. Stir until a dough begins to form.
  • Knead the Dough: On a floured surface, knead the dough for about 8-10 minutes until it’s smooth and elastic. If it’s too sticky, add a little more flour as needed.
  • Let It Rise: Place the kneaded dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 2: Prepare the Filling

  • Sauté the Onions: In a skillet, melt the butter over medium heat. Add the finely chopped onions, and sauté until they’re soft and translucent (about 5-7 minutes). Season with salt and pepper, and let cool slightly.
  • Combine with Cheese: In a bowl, mix the sautéed onions with the shredded cheese and any optional herbs.

Step 3: Assemble the Bread

  • Shape the Dough: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle (about 12×16 inches).
  • Add the Filling: Spread the cheese and onion mixture evenly over the dough, leaving about a 1-inch border on the edges.
  • Roll It Up: Starting from one long side, carefully roll the dough into a log. Pinch the seams to seal.
  • Form the Loaf: Place the rolled dough seam-side down in a greased loaf pan. Cover with a towel and let it rise for another 30-45 minutes.

Step 4: Bake the Bread

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Bake: Once the dough has risen again, bake for 25-30 minutes or until the top is golden brown and the bread sounds hollow when tapped.
