- 1 ¾ cups 220g all-purpose flour
- 1 ½ cups 300g granulated sugar
- ¾ cup 65g unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup 240ml whole milk
- ½ cup 120ml vegetable oil
- 2 teaspoons vanilla extract
- 1 cup 240ml boiling water
- 1 cup 150g fresh or frozen cherries, pitted and halved

- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
For the Chocolate Frosting:
- 1 cup 230g unsalted butter, softened
- 3 ½ cups 440g powdered sugar
- ½ cup 45g unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 2-4 tablespoons heavy cream or milk as needed for consistency
Step 1: Prepare the Cherry Filling
In a small saucepan over medium heat, combine the cherries, sugar, cornstarch, and lemon juice.
Cook, stirring gently, until the mixture thickens and bubbles, about 5-7 minutes.
Remove from heat and let it cool while you prepare the cake batter.
Step 2: Make the Chocolate Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
