Ingredients
  

For the Cake:

  • 1 ¾ cups 220g all-purpose flour
  • 1 ½ cups 300g granulated sugar
  • ¾ cup 65g unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup 240ml whole milk
  • ½ cup 120ml vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup 240ml boiling water
  • 1 cup 150g fresh or frozen cherries, pitted and halved

For the Cherry Filling:

  • 1 cup 150g fresh or frozen cherries, pitted and halved
  • ¼ cup 50g granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

For the Chocolate Frosting:

  • 1 cup 230g unsalted butter, softened
  • 3 ½ cups 440g powdered sugar
  • ½ cup 45g unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons heavy cream or milk as needed for consistency

Instructions
 

Step 1: Prepare the Cherry Filling

  • In a small saucepan over medium heat, combine the cherries, sugar, cornstarch, and lemon juice.
  • Cook, stirring gently, until the mixture thickens and bubbles, about 5-7 minutes.
  • Remove from heat and let it cool while you prepare the cake batter.

Step 2: Make the Chocolate Cake Batter

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until well combined.
  • Carefully stir in the boiling water. The batter will be thin—this is normal!
  • Gently fold in the halved cherries until evenly distributed.

Step 3: Bake the Cake

  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Step 4: Prepare the Chocolate Frosting

  • In a large mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
  • Add the vanilla extract and enough heavy cream to achieve your desired frosting consistency. Beat until light and fluffy.

Step 5: Assemble the Cake

  • Place one cake layer on a serving plate. Spread a layer of cherry filling on top.
  • Add the second layer of cake and frost the top and sides with the chocolate frosting.
  • Garnish with additional cherries if desired.
