Instructions
First, get your oven heating up to 350°F (175°C). While it’s warming, grease your 9×5-inch loaf pan or line it with parchment paper so the bread won’t stick.
Next, grab a large bowl and mix together the dry ingredients flour, baking soda, and salt. Just whisk them until combined, then set that bowl aside for now.
In a separate bowl, combine the melted butter with the sugars. Whisk them together until the mixture is smooth. Then, add the eggs one at a time, making sure to beat well after each addition. After the eggs, stir in the mashed bananas, Greek yogurt, and vanilla extract until everything is blended nicely.
Now, take the dry ingredients and add them slowly to the wet mixture. Use a spatula to fold the flour in gently, mixing just until you don’t see any streaks of flour anymore try not to overdo it.
Once that’s done, fold in most of the mini chocolate chips, keeping a few aside to sprinkle on top later. Pour the batter into the prepared loaf pan, then sprinkle the remaining chocolate chips over the surface.
Pop the pan into the oven and bake for about an hour. To check if it’s done, stick a toothpick in the center if it comes out clean or with a few moist crumbs, it’s ready.
When it’s finished baking, let the bread cool in the pan for around 10 minutes. After that, transfer it to a wire rack to cool completely before slicing.
