Ingredients
  

  • 1 ½ cups grated courgette zucchini
  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • ½ cup cocoa powder unsweetened
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup honey or maple syrup
  • cup melted coconut oil or olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup milk or plant-based milk
  • Optional: ½ cup dark chocolate chips

Instructions
 

Prepare the Courgette

  • Start by grating the courgette. You can leave the skin on for added nutrients. Squeeze out any excess moisture using a paper towel.

Preheat the Oven and Prepare the Baking Pan

  • Preheat your oven to 350°F (175°C). Grease an 8- or 9-inch baking pan and set it aside.

Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, cocoa powder, baking powder, baking soda, and salt.

Combine the Wet Ingredients

  • In another bowl, mix the honey or maple syrup, melted coconut oil, eggs, and vanilla extract until well combined. Stir in the milk.

Add the Courgette to the Wet Ingredients

  • Fold the grated courgette into the wet mixture.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Fold in Chocolate Chips (Optional)

  • If using, fold in the dark chocolate chips for an extra chocolatey touch.

Pour Batter into the Baking Pan

  • Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.

Bake the Cake

  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
