  • 1 1/4 cups warm water about 110°F or 43°C
  • 2 tablespoons honey or more, depending on how sweet you like your bread
  • 4 tablespoons unsalted butter sliced and softened
  • 2 1/2 cups whole wheat flour
  • 1 cup milk warm, about 230 milliliters
  • 1 cup bread flour optional, for a lighter loaf
  • 1 1/2 teaspoons salt
  • 1 teaspoon active dry yeast bread machine yeast works best

Step 1: Prepare the Ingredients

  • Start by warming your milk and water to around 110°F (43°C). This temperature is ideal for activating the yeast. In a small bowl, mix the warm water with the honey and stir until the honey dissolves completely.
  • Step 2: Layer the Ingredients in the Bread Machine
  • Add the warm milk and water mixture to the bread machine’s baking pan. Then, layer in the softened butter, allowing it to sit on top of the liquid ingredients.
  • Next, sprinkle the salt evenly over the liquid. Be careful not to let the salt come into contact with the yeast, as it can affect the rising process.

Step 3: Add the Flours

  • Now, add the whole wheat flour and bread flour (if using) into the pan. Make sure the flour is evenly spread out to help the yeast rise properly.

Step 4: Add the Yeast

  • Create a small well or indentation in the center of the flour mixture. This is where you’ll add the yeast. Be sure to place the yeast in the well so that it doesn’t touch the liquid or salt before the bread machine begins its cycle.

Step 5: Start the Bread Machine

  • Close the lid of your bread machine and select the Whole Wheat or Basic bread setting, depending on your machine.
  • Choose a medium or light crust setting (if your machine offers that option) and start the machine. The bread machine will mix, knead, rise, and bake the dough in about 3 to 4 hours.
  • Once the baking cycle is complete, remove the loaf from the machine and allow it to cool on a wire rack for 10–15 minutes before slicing.

❖ Honey: I recommend using raw honey for a more natural flavor, but feel free to experiment with different types of honey, such as clover or wildflower.
❖ Flour: If you want a lighter loaf, mix whole wheat flour with bread flour. For a heartier loaf, use 100% whole wheat flour.
