Equipment

  • Mixing bowls
  • Electric mixer or whisk
  • Measuring cups and spoons
  • Sifter (for powdered sugar)
  • 9-inch round cake pan (or preferred cake pan size)
  • Cooling rack
  • Rubber spatula
  • Whisk

Ingredients

  • ½ cup 4 oz. unsalted butter, softened
  • 6 Tbsp. 3 oz. unsalted butter, melted, divided
  • 2 cups granulated sugar
  • ½ cup whole buttermilk
  • 2 large eggs room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 2 ¼ cups all-purpose flour
  • Baking spray with flour for greasing the pan
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt plus an additional pinch
  • ½ teaspoon almond extract
  • 6 Tbsp. honey
  • ¼ cup plus 2 tablespoons powdered sugar sifted
  • 1 tablespoon whole milk

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan using baking spray with flour.

Prepare the Wet Ingredients:

  • In a large bowl, use a hand mixer (or whisk) to cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs, one at a time, and mix well after each addition. Stir in the vanilla extract, almond extract, lemon juice, and whole buttermilk.

Combine Dry Ingredients:

  • In another bowl, whisk together the flour, baking soda, kosher salt, and a pinch of salt.

Mix Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet mixture, mixing until fully combined. Be sure to scrape down the sides of the bowl to ensure all ingredients are incorporated.

Bake the Cake:

  • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Prepare the Glaze:

  • While the cake is baking, prepare the glaze. In a small bowl, whisk together the melted butter, honey, powdered sugar, and whole milk until smooth.

Cool the Cake:

  • Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes. Then, turn it out onto a cooling rack to cool completely.

Glaze the Cake:

  • Drizzle the honey glaze over the cooled cake, allowing it to soak in for extra flavor.

Serve:

  • Slice and serve your delicious butter cake. Enjoy!

Notes

If you’re watching your sugar intake, you can reduce the sugar by one-fourth without significantly affecting the texture and taste of the cake.
Additionally, experimenting with alternative sweeteners like honey or maple syrup can offer different flavor profiles and health benefits.
