Ingredients
  

For the Bread Dough:

  • 2 ½ cups shredded mozzarella cheese about 10 oz
  • 2 oz cream cheese
  • 1 ¼ cups almond flour fine-ground
  • 1 ½ tsp baking powder
  • 1 large egg
  • 1 tsp garlic powder optional
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 ¼ cups shredded cheddar cheese for filling and topping

For the Topping:

  • 1 ¼ cups shredded mozzarella cheese
  • ½ cup fresh cilantro for serving
  • ½ cup freshly grated parmesan cheese
  • 3 tbsp melted butter

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine 2 ½ cups shredded mozzarella and 2 oz cream cheese. Microwave for 30-45 seconds until melted, then stir until smooth.
  • In a separate bowl, whisk together almond flour, baking powder, garlic powder, salt, and pepper. Add the egg and mix until combined.
  • Add the melted cheese mixture into the dry ingredients and mix well. Stir in 1 ¼ cups shredded cheddar cheese for the filling.
  • Once the dough is smooth, shape it into a loaf or form into individual bread rolls, depending on your preference. Place it on the prepared baking sheet.
  • Sprinkle 1 ¼ cups mozzarella cheese, grated parmesan cheese, and melted butter evenly over the top of the dough.
  • Bake for 20-25 minutes or until the bread is golden and firm to the touch. Let the bread cool slightly, then sprinkle with fresh cilantro before serving.
