For the Cake:

  • 1 box white or yellow cake mix
  • 1 3 oz package yellow gelatin (lemon flavored)
  • 2 large eggs
  • 1 1/3 cups water
  • 3/4 cup vegetable oil

For the Glaze:

  • 2 tablespoons heavy cream
  • 2 tablespoons fresh lemon juice
  • 2 cups powdered sugar

Instructions
 

Step 1 – Get the Oven and Pan Ready

  • Start by preheating your oven to 350°F (175°C). While it’s heating up, grease a 9×13-inch baking dish or line it with parchment paper so your cake doesn’t stick.

Step 2 – Make the Batter

  • Grab a large bowl and mix together the cake mix and lemon gelatin powder. Add the eggs, water, and oil. Use a hand mixer set to medium speed and beat everything for about 2 minutes, until the batter looks smooth and everything’s well combined.

Step 3 – Bake the Cake

  • Pour the batter into your prepared pan and smooth out the top. Put it in the oven and bake for 30 to 35 minutes. You’ll know it’s done when you poke the center with a toothpick and it comes out clean.

Step 4 – Let It Cool

  • Once it’s out of the oven, let the cake sit in the pan for about 10 minutes. Then, carefully move it to a wire rack and let it cool completely before adding the glaze.

Step 5 – Whip Up the Glaze

  • In a small bowl, stir together the powdered sugar, heavy cream, and lemon juice. Mix until it’s nice and smooth. If it’s too thick or too thin, adjust with a little more lemon juice or cream to get the texture just right.
