Equipment

  • Electric mixer (optional)
  • Whisk
  • 9×13 inch baking pan
  • Measuring spoons and cups
  • Spatula
  • Small saucepan (for glaze)
  • Cooling rack

Ingredients

For the Cake:

  • 1 box of lemon cake mix
  • 3 oz Lemon Jello powder
  • 2 large eggs
  • 1 1/3 cups water
  • 2 tablespoons lemon zest
  • 3/4 cup vegetable oil

For the Glaze:

  • 2 tablespoons heavy cream
  • 2 tablespoons lemon juice
  • 2 cups powdered sugar

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan with non-stick spray or butter.

Prepare the Cake Batter:

  • In a large mixing bowl, combine the lemon cake mix, lemon Jello powder, eggs, water, lemon zest, and vegetable oil. Mix together using a whisk or electric mixer until smooth and well combined.

Bake the Cake:

  • Pour the cake batter into the prepared baking pan, spreading it evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely.

Prepare the Glaze:

  • In a small saucepan, combine the heavy cream and lemon juice. Heat over low-medium heat until warmed. Gradually add the powdered sugar, whisking continuously until smooth and fully combined.

Glaze the Cake:

  • Once the cake is completely cooled, drizzle the glaze over the top, allowing it to seep into the cake slightly for extra flavor.

Serve:

  • Slice the cake into 12 pieces and enjoy!
