Ingredients

  • 1/3 cup 80ml unsweetened applesauce (you can also use plain yogurt for moisture)
  • ¼ cup 60ml vegetable oil (or coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup 120ml unsweetened almond milk (or any milk of choice)
  • 3 tablespoons erythritol or any low-calorie sweetener of your choice, like stevia, monk fruit, or a combination
  • 1 tablespoon honey or maple syrup optional, for a bit of natural sweetness
  • ½ teaspoon vanilla bean paste optional, for a deeper vanilla flavor

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan (or line it with parchment paper).
  • Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • Wet Ingredients: In another bowl, combine the applesauce, oil, eggs, vanilla extract, and milk. If you’re using honey or maple syrup, add it here as well. Mix until smooth and fully combined.
  • Sweetener: Add your chosen sweetener (erythritol, monk fruit, or stevia) to the wet ingredients and stir until dissolved. Taste and adjust sweetness if necessary.
  • Combine Wet and Dry: Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the cake dense.
  • Bake: Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Oven times may vary, so check around the 25-minute mark.
  • Cool: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
