Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan (or line it with parchment paper).
Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
Wet Ingredients: In another bowl, combine the applesauce, oil, eggs, vanilla extract, and milk. If you’re using honey or maple syrup, add it here as well. Mix until smooth and fully combined.
Sweetener: Add your chosen sweetener (erythritol, monk fruit, or stevia) to the wet ingredients and stir until dissolved. Taste and adjust sweetness if necessary.
Combine Wet and Dry: Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the cake dense.
Bake: Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Oven times may vary, so check around the 25-minute mark.
Cool: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
