Ingredients
  

For the Cake:

  • 1 box of white cake mix or homemade white cake, if you prefer
  • 1 cup pureed fresh strawberries about 1 pint
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 small box of strawberry jello optional, but adds flavor

For the Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 2 tbsp pureed strawberries for flavor
  • A pinch of salt to balance sweetness

Instructions
 

Prepare the Cake Batter:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine the cake mix, pureed strawberries, vegetable oil, eggs, milk, and vanilla extract. You can add the strawberry jello to the batter if you like a more intense strawberry flavor.
  • Mix the ingredients until smooth and well-combined, either by hand or with an electric mixer.
  • Pour the batter evenly into the prepared cake pans.

Bake the Cake:

  • Bake the cakes in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare the Frosting:

  • In a large bowl, beat together the softened cream cheese and butter until creamy and smooth.
  • Add the vanilla extract, pureed strawberries, and a pinch of salt, and mix until well combined.
  • Gradually add the powdered sugar until the frosting is light and fluffy. Adjust the consistency by adding more powdered sugar if you want a thicker frosting.

Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of frosting on top.
  • Place the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
