Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Stand mixer with dough hook (optional)
  • Loaf pans (9-inch)
  • Kitchen towel
  • Wire cooling rack

Ingredients

  • 4 cups whole wheat flour
  • 2 ½ cups bread flour
  • 1 ¾ cups milk
  • ½ cup water warm
  • cup honey
  • cup vegetable oil
  • 2 teaspoons salt
  • 2 ¼ teaspoons active dry yeast

Instructions

  • Mix warm water and yeast in a small bowl; let it bloom for 5 minutes. In a saucepan, heat the milk until warm, then remove from heat and mix with honey and oil.
  • In a large mixing bowl, blend the whole wheat and bread flours with salt. Gradually add the milk mixture and yeast mixture to the flour.
  • Knead the dough by hand or using a dough hook for 8-10 minutes until smooth.
  • Place dough in a greased bowl, cover, and let it rise in a warm spot for 1-1.5 hours, or until doubled.
  • Punch down the dough, divide into two portions, and shape into loaves. Place them in greased loaf pans.
  • Cover and let the dough rise again for about 45 minutes until it reaches the top of the pans.
  • Preheat the oven to 350°F. Bake for 35-50 minutes until the crust is golden brown and the loaves sound hollow when tapped.
  • Remove from pans, cool on a wire rack, and enjoy!
