Step 1: Preheat and Prep

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easy removal later.

Step 2: Mash and Mix Wet Ingredients

  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the eggs, vegetable oil (or melted butter), sugar, and vanilla extract. Mix everything together until well combined.

Step 3: Add Dry Ingredients

  • To the same bowl, add the flour, baking soda, and salt. Stir until just combined. Be careful not to overmix—stop when you no longer see dry flour streaks.

Step 4: Add Nuts

  • Fold in the chopped walnuts or pecans, if using. This adds a lovely crunch and flavor, but you can skip this step if you prefer it nut-free.

Step 5: Bake and Cool

  • Pour the batter into your prepared loaf pan and spread it out evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Riper bananas (lots of brown spots) make sweeter and more flavorful banana bread. You can substitute chocolate chips for nuts or mix in both for extra richness. For extra moistness, try adding 2 tablespoons of sour cream or yogurt to the wet mix.
