Preheat the Oven

  • Preheat your oven to 350°F (175°C). Greasing the cake pans will help the cake release easily later on.

Prepare the Cake Batter

  • In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix them together until they are creamy and smooth. Then, add the eggs one at a time, mixing well after each addition.

Add Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the peanut butter mixture, alternating with the milk. Stir in the vanilla extract and mix until the batter is smooth and well combined.

Bake the Cake

  • Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a cooling rack.

Make the Frosting

  • Gradually add the powdered sugar, mixing well. If the frosting is too thick, add milk one tablespoon at a time until you reach your desired consistency.

Assemble the Cake

  • Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of jam on top, followed by a layer of peanut butter frosting.
  • Place the second cake layer on top and frost the top and sides with the remaining frosting. Feel free to add extra jam on top for a lovely finish!
