  • 1 2/3 cups whole wheat flour
  • 3/4 cup granulated sugar

  • 3/4 cup buttermilk or plain yogurt

  • 1/2 cup all-purpose flour
  • 3/4 cup roasted salted peanuts
  • 3 tbsp brown sugar
  • 1 1/2 tsp cinnamon
  • 3 tbsp melted butter

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan to prepare for the cake.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until evenly combined.

Step 3: Prepare the Wet Ingredients

  • In a separate bowl, mix the creamy peanut butter, buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth. Gradually add the cooled brewed coffee and stir until fully incorporated.

Step 4: Combine Wet and Dry Ingredients

  • Pour the wet mixture into the bowl with the dry ingredients. Using a rubber spatula, gently fold the mixture until just combined. Avoid overmixing; it’s okay if a few lumps remain.

Step 5: Prepare the Topping

  • In a small bowl, combine the all-purpose flour, roasted peanuts, brown sugar, and cinnamon. Drizzle in the melted butter and mix until the topping is crumbly.
