Ingredients
  

For the Cake:

  • cups 220g all-purpose flour
  • cup 80g peanut butter
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup 200g brown sugar
  • 1 large egg beaten
  • 1 cup 240ml buttermilk
  • ½ teaspoon vanilla extract

For the Glaze:

  • 1 tablespoon peanut butter
  • ½ tablespoon icing sugar
  • 5 tablespoons milk

Instructions
 

Preheat and prepare the pan

  • Set your oven to 350°F (175°C). Lightly grease a loaf pan with butter or line it with parchment paper so the cake won’t stick.

Mix the dry ingredients

  • In a large bowl, sift together the all-purpose flour, baking soda, and salt. Set this mixture aside for now.

Combine the wet ingredients

  • In another bowl, beat the brown sugar and peanut butter until smooth and creamy. Add the beaten egg, buttermilk, and vanilla extract, stirring until everything is fully combined.

Bring wet and dry together

  • Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until combined don’t overdo it, or the cake might become dense.

Bake the cake

  • Pour the batter into the prepared loaf pan and smooth the top. Bake in the oven for 45–50 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Prepare the glaze

  • While the cake is baking, make the glaze. In a small saucepan over low heat, stir together peanut butter, icing sugar, and milk until smooth and slightly thickened. You can also do this in the microwave in short bursts, stirring in between.

Glaze and serve

  • When the cake comes out of the oven, let it cool in the pan for 10 minutes. Then transfer it to a wire rack. Drizzle the peanut butter glaze over the warm cake and let it set slightly before slicing and serving.
