Ingredients
  

For the Cake:

  • 1 1/4 cups 300 grams peanut butter
  • 250 grams self-raising flour
  • 7 pieces eggs
  • 2 1/2 teaspoons vinegar
  • 125 ml milk
  • 1 tablespoon + 1 teaspoon baking powder
  • 1 cup crushed cashew nuts optional

For the Glaze (optional):

  • 1 1/4 cups powdered sugar
  • 5 tablespoons milk
  • 5 tablespoons cocoa powder for a chocolate glaze

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a loaf pan.
  • Mix Wet Ingredients: In a large bowl, combine the peanut butter, eggs, milk, and vinegar. Mix until smooth and well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the self-raising flour, baking powder, and crushed cashew nuts.
  • Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
  • Pour into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake: Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
  • Prepare Glaze (Optional): In a small bowl, mix the powdered sugar, milk, and cocoa powder until smooth. Adjust the consistency with more milk or powdered sugar as needed.
  • Glaze the Cake: Once the loaf cake is completely cool, drizzle the glaze over the top.
