Equipment

  • 1 microwave-safe mug (12 oz or larger)
  • Measuring spoons and measuring cup
  • Spoon or small whisk
  • Microwave

Ingredients

  • 4 tbsp all-purpose flour
  • 2 tbsp granulated sugar or brown sugar for a richer flavor
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 3 tbsp milk dairy or non-dairy
  • 1 tbsp vegetable oil or melted butter
  • 2 tbsp creamy peanut butter
  • 1/4 tsp vanilla extract
  • Optional: A few chocolate chips or chopped peanuts for topping

Instructions

  • In your microwave-safe mug, combine flour, sugar, baking powder, and salt. Stir well to mix evenly. Add the milk, oil (or melted butter), peanut butter, and vanilla extract to the mug. Mix until a smooth batter forms with no dry patches.
  • Stir in chocolate chips or sprinkle them on top for extra flavor. Microwave on high for 1 minute 15 seconds to 1 minute 30 seconds. The cake should rise and look set in the center. Avoid overcooking, or it will turn dry.
  • Let it cool for a minute (it will be hot!), then dig in with a spoon. Optionally, top with more peanut butter, a scoop of ice cream, or a drizzle of honey.

Notes

Be mindful when removing the mug from the microwave, as it might be hot. Adjust the sweetness level according to your preference by adding more or less sugar.
