Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • 9×13-inch baking pan or round cake pans
  • Spatula
  • Measuring cups and spoons
  • Cooling rack
  • Whisk

Ingredients

For the Cake:

  • 1 15.25 oz box of vanilla cake mix
  • 1 4-serving size box of instant vanilla pudding mix
  • 1/3 cup vegetable oil
  • 3 large eggs room temperature
  • 1 cup 240 ml whole milk, room temperature
  • 2 cups white chocolate chips
  • 1 teaspoon sour cream

For the Icing:

  • 1 cup unsalted butter softened
  • 3-4 cups powdered sugar adjust for desired consistency
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons heavy cream or milk for a thinner icing
  • A pinch of salt optional

Instructions

Cake Preparation:

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the vanilla cake mix, vanilla pudding mix, vegetable oil, eggs, whole milk, and sour cream. Beat using a hand mixer or stand mixer on medium speed until smooth, about 2 minutes.
  • Fold in the white chocolate chips into the batter using a spatula.
  • Pour the batter into a greased and floured 9×13-inch baking pan (or two round cake pans). Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool completely in the pan on a cooling rack before icing.

Icing Preparation:

  • In a mixing bowl, beat together the softened butter, powdered sugar (start with 3 cups and adjust for thickness), vanilla extract, and salt until smooth. Gradually add heavy cream (or milk) one tablespoon at a time, continuing to beat until you reach your desired consistency.
  • Once the cake has completely cooled, spread the icing evenly over the top of the cake using a spatula.

Notes

For a fun twist, add a splash of lemon juice or zest to the batter for a refreshing citrus flavor that pairs beautifully with the vanilla.
Feel free to customize the frosting with your favorite color or even sprinkles on top to make the cake extra festive for special occasions.
If you want to make the cake even more decadent, try filling it with fresh whipped cream or fruit jam between the layers before frosting!
