Strawberry Cake Cookies
Lipia
Strawberry cake cookies have a soft, melt-in-your-mouth texture with a sweet, fruity flavor that tastes just like strawberry cake in cookie form. The edges are lightly crisp, while the center stays tender and chewy. A dusting of powdered sugar adds a gentle sweetness and slight crunch, creating a pleasant contrast. Each bite brings a burst of strawberry goodness.

- 1 box 15.25 oz strawberry cake mix
- 1/3 cup vegetable oil or canola oil
- ½ teaspoon baking powder
- 2 large eggs
- ½ cup powdered sugar
First, heat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat this will stop the cookies from sticking.
Next, take a large bowl and add the strawberry cake mix, vegetable oil, baking powder, and eggs. Use a spoon or a hand mixer to combine everything well until you get thick, smooth dough.
Once the dough is ready, scoop out tablespoon-sized portions and roll each into a ball with your hands. Place these dough balls on the baking sheet, making sure to leave some space between each one.
Pop the baking sheet into the oven and bake the cookies for about 10 to 12 minutes. The cookies should look set but still feel soft to the touch don’t let them take too long, or they’ll lose their chewy texture.
Right after taking the cookies out of the oven, while they’re still warm, gently roll each one in powdered sugar until fully coated. Then move the cookies onto a cooling rack and let them cool completely before you enjoy them.
These cookies are soft and cake-like with a sweet strawberry flavor. The powdered sugar coating adds a nice, delicate sweetness and a pretty finish. For an extra touch, you can add a few freeze-dried strawberry pieces or white chocolate chips into the dough before baking.
