Equipment

  • Mixing bowls (2)
  • Hand mixer or stand mixer
  • Baking pan (9×13 inch)
  • Parchment paper
  • Ice cream scooper (small)
  • Lollipop sticks
  • Melting pot or microwave-safe bowl
  • Baking sheet lined with parchment paper

Ingredients

For the Cake:

  • 1 box strawberry cake mix plus ingredients listed on the box
  • 1/2 cup strawberry puree fresh or store-bought

For the Frosting:

  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1/4 cup cream cheese softened
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

For Dipping:

  • 12 ounces white candy melts
  • Sprinkles of your choice

Instructions

Bake the Cake:

  • ● Preheat your oven to the temperature specified on the cake mix box. Grease your baking pan with butter or cooking spray and line it with parchment paper.
  • ● In a large mixing bowl, prepare the cake batter according to the cake mix instructions, adding the strawberry puree for an extra burst of flavor.
  • ● Pour the batter into the prepared pan and bake for the recommended time, or until a toothpick inserted into the center comes out clean.
  • ● Let the cake cool completely on a wire rack before proceeding.

Make the Frosting:

  • ● While the cake cools, whip up the delicious frosting! In a separate mixing bowl, cream together the softened butter and cream cheese until light and fluffy.
  • ● Gradually add the powdered sugar, beating until fully incorporated.
  • ● Stir in the vanilla extract and milk, one tablespoon at a time, until the frosting reaches a smooth, pipeable consistency.

Assemble the Cake Pops:

  • ● Now comes the fun part! Once the cake is cool, crumble it into a large bowl using your hands or a fork.
  • ● There shouldn’t be any large chunks remaining.
  • ● Add the frosting to the crumbled cake and mix well, until everything is evenly combined and the mixture feels moldable.
  • ● If the mixture seems too dry, add a little more frosting by the tablespoonful. Conversely, if it’s too wet, add a sprinkle of extra cake crumbs.

Shape and Freeze:

  • ● Use a small ice cream scooper to portion out the cake mixture and roll it into smooth balls between your palms.
  • ● Place the cake balls on a baking sheet lined with parchment paper and freeze for at least 30 minutes, or until firm.
  • ● This helps the cake pops hold their shape while dipping.

Dipping and Decorating:

  • ● Melt the white candy melts in a melting pot or microwave-safe bowl according to package instructions.
  • ● Dip the end of a lollipop stick into the melted chocolate, then insert it halfway into a frozen cake ball. Repeat for all the cake balls.
  • ● Once all the cake pops are dipped, hold them upright in a styrofoam block or cardboard box with holes to allow the excess chocolate to drip off.
  • ● Decorate with your favorite sprinkles while the chocolate is still wet.

Chill and Enjoy!

  • ● Let the cake pops set completely at room temperature, or pop them back in the fridge for 15 minutes for an extra chocolatey shell.
  • ● Then, it’s time to indulge!

Notes

Be sure to store any leftover cake pops in an airtight container in the refrigerator for up to 3 days.
