For the Cake:

  • 1 package plain white cake mix
  • 1 cup chopped strawberries including juice
  • 3/4 cup milk
  • 1 cup water
  • 3/4 cup vegetable oil
  • 3 large eggs

For the Strawberry Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1.5 oz freeze-dried strawberries
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 2-3 tbsp milk if needed to adjust consistency

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a single rectangular pan, depending on your preference.

Prepare the Cake Batter

  • In a large bowl, combine the plain white cake mix, chopped strawberries (with juice), milk, water, vegetable oil, and eggs. Use a hand mixer or stand mixer to mix everything together until smooth, about 2-3 minutes.

Bake the Cake

  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a cooling rack to cool completely.

Make the Strawberry Cream Cheese Frosting

  • In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy. Add the freeze-dried strawberries and continue to mix until well incorporated.
  • Gradually add the powdered sugar, 1 cup at a time, beating on low speed until smooth. Add the vanilla extract, kosher salt, and mix until combined. If the frosting is too thick, add 1-2 tablespoons of milk to reach your desired consistency.

Frost the Cake

  • Once the cakes have cooled completely, spread a layer of frosting on top of the first cake layer. Place the second cake layer on top and frost the top and sides of the entire cake. For a decorative touch, you can pipe extra frosting on top and garnish with fresh strawberries or freeze-dried strawberries.
