Instructions
 

Prepare the Sponge Cake:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Beat eggs and sugar with a hand mixer or stand mixer until pale and fluffy (about 5 minutes). Add vanilla extract.
  • In a separate bowl, sift together flour, baking powder, and salt. Gradually fold this into the egg mixture until well combined.
  • Pour the batter onto the prepared baking sheet and spread evenly.
  • Bake for 12-15 minutes, or until the cake springs back when touched. Let it cool for a few minutes, then carefully roll the cake in parchment paper to cool completely.

Make the Strawberry Filling:

  • Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  • In another bowl, combine pureed strawberries and softened cream cheese. Gently fold this mixture into the whipped cream until smooth.

Assemble the Cake Roll:

  • Once the cake is completely cooled, carefully unroll it. Spread the strawberry filling evenly over the surface.
  • Roll the cake back up tightly and dust with powdered sugar. Optionally, garnish with fresh strawberries.
