Ingredients
  

For the Cake:

  • 2 boxes of white or vanilla cake mix
  • 6 ounces strawberry Jello 2 small boxes
  • 6 large eggs
  • cup vegetable oil
  • 5 cups heavy cream divided
  • 2 cups boiling water

Frosting:

  • 2 8-oz. blocks cream cheese, room temperature
  • 1⅓ cups 150 g. confectioners’ sugar
  • 3 cups heavy whipping cream
  • ¼ tsp. kosher salt
  • 2 tsp. pure vanilla extract

For the Crunch Topping:

  • 36-40 Golden Oreos coarsely crushed
  • 1 cup strawberry-flavored gelatin like Jell-O
  • 1 cup unsalted butter melted

Instructions
 

Bake the Cake:

  • Preheat your oven according to the cake mix instructions. Grease and flour two 9×13 inch pans.
  • In a large mixing bowl, combine the cake mix, strawberry Jello, eggs, vegetable oil, and boiling water. Mix until well combined.
  • Divide the batter evenly between the prepared pans and bake 30 minutes according to package instructions, or until a toothpick inserted in the center comes out clean. Let cool completely.

Prepare the Frosting:

  • In a large bowl, beat the cream cheese until smooth. Gradually add the confectioners’ sugar, mixing until combined.
  • In a separate bowl, whip the heavy whipping cream, kosher salt, and vanilla extract until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Assemble the Cake:

  • Once the cakes are completely cooled, use a fork to poke holes all over the tops of both cakes.
  • Pour half of the remaining heavy cream over each cake, allowing it to soak in.
  • Spread the cream cheese frosting evenly over both cakes.

Make the Crunch Topping:

  • In a bowl, mix the crushed Golden Oreos with the strawberry gelatin and melted butter until well combined.
  • Sprinkle the crunch topping evenly over the frosted cakes.

Chill and Serve:

  • Refrigerate the cakes for at least 2 hours before serving to allow the flavors to meld.
