Ingredients
  

For the Cake:

  • 1 3 oz package strawberry-flavored Jell-O®
  • 2 cups white sugar
  • 2 ¾ cups sifted cake flour
  • 2 ½ teaspoons baking powder
  • 1 cup unsalted butter softened
  • ½ cup strawberry puree fresh or thawed
  • 4 large eggs at room temperature
  • 1 cup whole milk at room temperature

For the Strawberry Glaze:

  • 1 ½ cups powdered sugar
  • 2 tablespoons freeze-dried strawberry powder
  • 3 to 4 tablespoons hot water adjust as needed

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them, then set them aside.
  • In a large bowl, sift together the cake flour, baking powder, and strawberry-flavored Jell-O powder. Set this mixture aside.
  • Using an electric mixer, cream the softened butter and white sugar together until the mixture becomes light and fluffy, about 3 to 4 minutes.
  • Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.
  • Next, add the dry ingredients and milk to the butter mixture in three alternating additions, starting and ending with the dry ingredients. Mix gently after each addition to avoid overmixing.
  • Carefully fold in the strawberry puree until just combined, being careful not to overwork the batter.
  • Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely before applying the glaze.
  • To make the glaze, whisk together powdered sugar and freeze-dried strawberry powder in a small bowl. Gradually add hot water, one tablespoon at a time, whisking continuously until you achieve a smooth, pourable consistency. Add more water as needed.
  • Once the cakes have fully cooled, drizzle or spread the strawberry glaze evenly over the top. Allow the glaze to set for about 15 minutes before slicing and serving.

Notes

For best flavor, use fresh strawberry puree made by blending ripe strawberries. If you don’t have freeze-dried strawberry powder for the glaze, you can substitute with finely crushed freeze-dried strawberries or omit it, though the glaze won’t have the same vibrant color or flavor.
