Ingredients
  

For the Cake:

  • 1/3 cup unsalted butter softened
  • cups cake and pastry flour or all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons strawberry Jello powder
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ cup canned crushed pineapple with juice
  • 1 cup fresh strawberries chopped

For the Whipped Pineapple Topping:

  • cups crushed pineapple
  • 8 oz light Cool Whip or homemade whipped cream
  • cup vanilla instant pudding mix 135 g / 4.75 oz
  • ¼ cup chopped fresh strawberries for topping

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.

Prepare the Dry Ingredients:

  • In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.

Cream the Butter and Sugar:

  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.

Add the Jello Powder:

  • Stir in the strawberry Jello powder, mixing until evenly incorporated.

Combine Wet and Dry Ingredients:

  • Gradually add the dry flour mixture to the wet ingredients, alternating with milk. Start and end with the dry ingredients. Stir in the vanilla extract, followed by the crushed pineapple with juice, and chopped fresh strawberries.

Bake the Cake:

  • Pour the batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.

Prepare the Topping:

  • While the cake is cooling, prepare the whipped pineapple topping. In a medium bowl, combine the crushed pineapple, Cool Whip (or homemade whipped cream), and vanilla instant pudding mix. Mix until smooth and creamy.

Assemble and Serve:
