Equipment

  • Mixing bowl
  • Whisk
  • Spatula
  • 8-inch baking dish
  • Ice cream scoop (optional)

Ingredients

  • 1/2 cup 1 stick unsalted butter, melted and divided
  • 1 cup fresh strawberries hulled and sliced
  • 2/3 cup packed light brown sugar divided
  • 1/2 cup whole milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Vanilla ice cream for serving (optional)

Instructions

Prep the Strawberries and Butter

  • ● Preheat your oven to 350°F (175°C). In a medium bowl, toss together the sliced strawberries with 1/3 cup of the brown sugar.
  • ● Set this aside to let the juices release while you prepare the batter.
  • ● Use half of the melted butter to generously grease your 8-inch baking dish.
  • ● This step ensures the cake won’t stick and makes for easy scooping later.

Make the Easy Batter

  • ● In your large mixing bowl, whisk together the remaining 1/3 cup of brown sugar, the milk, flour, baking powder, and salt.
  • ● Once combined, whisk in the melted butter and vanilla extract until you have a smooth batter. It will be slightly thick, but that’s perfectly normal.

Assemble and Bake!

  • ● Pour the batter into your prepared baking dish.
  • ● Don’t worry about spreading it perfectly – it will settle during baking.
  • ● Gently spoon the strawberry mixture (including the juices) on top of the batter.
  • ● Pop your cake into the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean with just a few crumbs.

Devour Warm with Vanilla Ice Cream (Optional)

  • ● Let the cake cool slightly on a wire rack before digging in. This allows the juices to set and prevents a soupy mess.

Notes

Feel free to experiment with different fruits in this recipe! Blueberries, raspberries, or a combination of berries would all work wonderfully in place of strawberries.
