Equipment

  • Mixing bowls (large and medium)
  • Electric mixer (handheld or stand)
  • Whisk
  • Spatula
  • Measuring cups and spoons
  • 8×8 inch baking pan
  • Parchment paper

Ingredients

  • 1 cup 225g unsalted butter, softened
  • 1 and 1/2 cups 300g granulated sugar
  • 4 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 and 1/2 cups 300g all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup 240ml whole milk

Instructions

  • Step 1: Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.
  • Step 2: Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand mixer or a stand mixer fitted with the paddle attachment.
  • Step 3: Add Eggs and Flavorings: Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Then, mix in the vanilla extract and almond extract until well combined.
  • Step 4: Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Step 5: Alternate Adding Dry Ingredients and Milk: Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Begin and end with the dry ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • Step 6: Divide Batter and Bake: Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  • Place the pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Step 7: Cool and Frost: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • Once cooled, frost the cakes with your favorite frosting, such as vanilla buttercream or almond-flavored frosting.
  • Step 8: Serve and Enjoy: Slice the cake, serve, and enjoy the deliciousness of your homemade Vanilla Almond Cake!

Notes

1. For a richer flavor, you can toast the almonds before adding them to the batter.
2. Make sure your ingredients are at room temperature before starting to ensure a smooth batter.
3. Don’t overmix the batter once you’ve added the flour, as this can result in a dense cake.
