Ingredients
  

For the Cake:

  • 1 ½ cups 190g all-purpose flour
  • 1 cup 200g granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ cup 113g unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk or 1 cup milk + 1 tablespoon vinegar, let sit for 5 mins
  • 2 teaspoons vanilla extract
  • ¼ cup rainbow sprinkles or your preferred variety

For the Vanilla Buttercream Frosting:

  • 4 cups 500g icing sugar, sifted
  • ¾ cup 170g unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk add more for a thinner consistency if needed

Instructions
 

Prepare the Oven and Pan:

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

Mix the Dry Ingredients:

  • In a medium bowl, whisk together the flour and baking powder. Set aside.

Cream Butter and Sugar:

  • In a large bowl, cream the softened butter and sugar together until light and fluffy (about 2–3 minutes).

Add Eggs and Vanilla:

  • Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.

Combine Wet and Dry:

  • Alternate adding the flour mixture and the buttermilk to the butter mixture, starting and ending with the flour. Mix just until combined.

Fold in Sprinkles:

  • Gently fold in the sprinkles with a spatula. Do not overmix to avoid color bleeding.

Bake the Cake:

  • Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.

Cool:

  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make the Frosting:

  • In a bowl, beat the butter until creamy. Gradually add sifted icing sugar, vanilla extract, and milk. Beat until light and fluffy. Adjust the milk to achieve desired consistency.

Frost and Decorate:

  • Spread the frosting evenly over the cooled cake using an offset spatula. Add extra sprinkles on top for decoration if desired.
