Ingredients
  

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 cup buttermilk or milk with 1 tbsp vinegar
  • 2 tsp vanilla extract
  • ¼ cup rainbow sprinkles or your preferred color

For the Vanilla Buttercream Frosting:

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar confectioners’ sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • ¼ cup rainbow sprinkles for decoration

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Mix Dry Ingredients:

  • In a medium bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt. Set aside.

Cream the Butter and Sugar:

  • In a large mixing bowl, use an electric mixer or a whisk to beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla:

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Wet and Dry Ingredients:

  • Alternate adding the dry flour mixture and the buttermilk (or milk with vinegar) to the butter mixture, starting and ending with the flour mixture. Mix until just combined. Avoid over-mixing.

Add Sprinkles:

  • Gently fold in the rainbow sprinkles with a spatula until evenly distributed throughout the batter.

Pour Batter Into Pans:

  • Divide the batter evenly between the two prepared cake pans, smoothing the tops with a spatula.

Bake the Cake:

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting:

  • While the cakes are cooling, make the frosting. In a medium bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy, about 3-4 minutes. Adjust the consistency by adding more cream if needed.

Frost the Cake:

  • Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of frosting over the top. Add the second layer of cake, and frost the top and sides of the entire cake. Decorate with more rainbow sprinkles.
