Activating the Yeast

  • In a large bowl, combine the warm water and maple syrup. Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until it becomes frothy.

Mixing the Dough

  • Add the whole wheat flour, flaxseed meal (if using), olive oil, and salt to the bowl with the yeast mixture. Use a wooden spoon or stand mixer with a dough hook to mix until a rough dough forms.

Kneading the Dough

  • Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for 5-6 minutes.

First Rise

  • Place the dough in a lightly greased bowl, cover it with a damp kitchen towel, and let it rise in a warm place for 1-1.5 hours or until it doubles in size.

Shaping the Dough

  • Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan or on a baking sheet lined with parchment paper.

Second Rise

  • Cover the shaped dough with a towel and let it rest for another 30 minutes until it puffs up slightly.

Baking

  • Preheat your oven to 375°F (190°C). Bake the bread for 30-35 minutes or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.

Cooling
